性质描述:

本品为白色有光泽颗粒晶体。熔点168℃（分解）。能溶于水、醇和吡啶，颇溶于丙醇，微溶于甘油，其化学性质与抗坏血酸非常相似，具有同样强的还原作用。

生产方法:

以玉米淀粉为原料，通过发酵成葡萄糖酸来制得。日本藤泽药品公司采用的工艺过程是：由玉米淀粉制得葡萄糖，然后制成2-古罗酮糖酸甲酯(Methly2-ketogluconate)，用甲醇钠处理得到异抗坏血酸钠，再通过离子交换树脂脱盐，即制得异抗坏血酸。

用途:

异抗坏血酸是维生素C的一种最重要的异构体。其生理作用，在抗坏血方面的作用只有抗坏血酸的1/20，但在降血压、利尿、肝糖原生成、色素排泄、解毒等方面的作用，大致与抗坏血酸相同。因此异抗坏血酸的市场需求与维生素C有着竞争关系。异抗坏血酸主要用于食品工业。在日本占有总需求量的93%以上。用作食品抗氧化剂，广泛用于肉食品、鱼食品、啤酒、水果汁、果汁晶、水果和蔬菜罐头、糕点、乳制品、果酱、葡萄酒、咸菜、油脂等。异抗坏血酸的毒性：小鼠口服LD50为5g/kg。对大鼠饲喂含1%异抗坏血酸的食饵6个月，未见生长异常。再继续饲喂二年，在体重、死亡率和组织病理学的观察方面均没有任何异常。人摄取异抗坏血酸，在体内可转变成维生素C。在实际使时，几乎都是使用其钠盐，如异抗坏血酸钠（C6H7NaO6）。异抗坏血酸钠为白色结晶。能溶于水，水溶液pH为5-6。小鼠口服LD为15.3g/kg。
