性质描述:

含半分子结晶水者为无色结晶。229-230℃分解。25℃水中溶解度20.1克/100毫升。难溶于甲醇、乙醇（0.07克/100毫升，25℃）、丙酮。无臭，味微甜。

生产方法:

有发酵法和合成法。发酵法用产谷氨酸小球菌或短杆菌、棒杆菌等使糖类、氨、高丝氨酸发酵而得。而合成法由甘氨酸铜为原料，此合成路线收率高、较经济。

用途:

L-苏氨酸（[72-19-5]）为必需氨基酸，DL-苏氨酸的生理效用为L-苏氨酸二分之一，缺乏时易患食欲不振、脂肪肝等症、苏美氨酸在高等动物体内不能合成，必需由体外供给。谷类蛋白质除需补充L-赖氨酸外，其次即为L-苏氨酸。这是由于L-苏氨酸的含量虽较多，但在蛋白质中苏氨酸与肽的结合很难水解。不易消化吸收所致。作为营养增补剂，为发挥最佳使用交果，可与甘氨酸共用于白米，与甘氨酸及缬氨酸共用于小麦粉，与甘氨酸和蛋氨酸共用大麦、燕麦，与甘氨酸和色氨酸共用于玉米。与葡萄共热易产生焦香和巧克力的香味。有增香作用。亦用于折分制得L-苏氨酸而配制氨基酸输液和综合氨基酸制剂。
