性质描述: 无色结晶。熔点约为263℃（发泡分解）。易溶于水（1：3），难溶于醇和醚。几乎无味。
生产方法: 赖氨酸虽然也可从蛋白质原料（例如猪血粉）的水解液中提取，但现在使用的赖氨酸，主要是用发酵法生产的盐酸赖氨酸，提取法和发酵法得到的都是L-赖氨酸。在发酵法中，有经由二氨基庚二酸的二步法和以糖为原料的一步法，糖类发酵采用得较多。二氨基庚二酸法生产过程：利用埃希氏大肠杆菌（Escherichia Coli）生物合成L-赖氨酸，是用一种没有二氨基庚二酸脱羧酶的功能，没有赖氨酸就不能成长的大肠杆菌的变株，采用甘油、玉米浸渍液、磷酸铵等作为培养基进行培养，培养基中会积蓄大量的二氨基庚二酸，此时培养液要保持中性，这是提高效率的重要因素。然后采用具备对于二氨基庚二酸有脱羧功能，而对赖氨酸则不起脱羧作用的产气杆菌（Aerobator aerogenes）或普通的大肠杆菌体，用甲苯将脱羧酶溶出后，这种酶和前述的二氨基庚二酸作用，几乎可以定量地生成L-赖氨酸，再经离子交换树脂分离、精制而得成品L-赖氨酸盐酸盐。合成法中有以已内酰胺为起始原料或以二氢呋喃为起始原料的方法，合成法得到的是外消旋体，必须进行光学拆分。
用途: 赖氨酸是最重要的氨基酸之一，氨基酸工业目前已成为具有相当规模和重要性的一个行业。赖氨酸主要用于食品、医药、饲料中。
