性质描述: 白色丝光针状结晶或结晶性粉末。熔点342-244℃（分解）。溶于碱溶液，微溶于水，不溶于无水乙醇、醚和丙酮。
生产方法: 由酪素、绢丝等蛋白质酸水解物中和产生的沉淀分离后，溶于稀氨水，用醋酸中和至pH=5，进行重结晶而得。将猪毛水解液提取胱氨酸的第二次粗品结晶纯液，在20℃以下存放二天，使酪氨酸沉淀，过滤，可得酪氨酸粗品，经精制亦可获得L-酪氨酸。对猪毛的收率为1%。
用途: 营养增补剂。医药上用于治疗脊髓炎和结核脑炎、甲状腺菌能亢进等症，也用于制造L-多巴二碘酪氨酸。与糖类共热发生氨基羰基反应后，可生成特殊香味物质。
