性质描述: 该品是最重要的氨基酸之一。DL-蛋氨酸从醇中结成白色薄片状结晶或结晶性粉末，微甜，有特殊气味。无旋光性。熔点281℃（分解）。对热及空气稳定。相对密度1.340。能溶于水、稀酸和稀碱类，微溶于95%的醇，不溶于醚。1%的水溶液pH值为5.6-6.1。蛋氨酸是唯一含硫醚的氨基酸，分左旋体（L-蛋氨酸，[63-68-3]）和右旋体（D-蛋氨酸，[348-67-4]）。一般氨基酸右旋体是无效的，但蛋氨酸例外。在生物体内D-蛋氨酸能转换成L-蛋氨酸。正是由于这两种蛋氨酸在生物化学方面均有效，因此，在合成蛋氨酸生产中，不需要拆分而直接使用DL-蛋氨酸，通常所说的蛋氨酸一般都是指DL-蛋氨酸。
生产方法: 可采用提取法制备蛋氨酸，但工业上有以下方法：1. 罗纳－普朗克工艺2. 德固萨DL-蛋氨酸工艺原料消耗定额：丙烯醛480kg/t、甲硫醇400kg/t、氰化钠420kg/t。
用途: 商品蛋氨酸的含量≥98.5%，是禽畜类动物生长所必需的氨基酸之一，是生物合成蛋白质的“骨架”氨基酸，对动物的新陈代谢有很强的调节作用，广泛应用于医药、食品、饲料和化妆品等领域。其中在医药方面，可作为氨基酸输液和复合氨基酸的主要成分，还可用于合成药用维生素，利用其抗脂肪肝的作用，可用于生产保肝制剂；在食品方面，用于食品的氨基酸强化及食品保健品的加工，可用作营养增补剂，由于有特殊气味，故只用于鱼糕类的制品；在饲料工业中，蛋氨酸的用量最大，用作饲料的营养强化剂，弥补氨基酸平衡的饲料添加剂，在氨基酸类营养饲料添加剂的品种中，蛋氨酸60%，赖氨酸占30%，其他氨基酸约占10%。

Methionine is an essential amino acid which acts a precursor for transmethylation and transsulfuration. In proteins, L-methionine is the biologically active form. D-methionine is converted to L-methionine by enzymes in the body. The adenosylation of methionine results in the formation of S-adenosyl-L-methionine (SAM), which serves as a methyl donor to various substances. L-Methionine′s metabolic product glutathione is known to regulate immune response and has antiviral action.
