性质描述: 无色至白色结晶性粉末，无臭。有甜味，甜度约为蔗糖的70%。溶于水，微溶于乙醇，不溶于乙醚。具有旋光性。外消旋型（dl-）氨基丙酸熔点295℃（分解），200℃时升华。左旋（l-）-2-氨基丙酸熔点297℃（分解）；右旋（d-）体熔点295℃（分解）。左旋（l-）体的氢氯化物为棱形结晶体，熔点204℃（分解）；左旋（l-）体的N-乙酰基物结晶体熔点116℃；其N-苯基物结晶体熔点152-154℃。
生产方法: 1.丙酸氯化氨化法由丙酸为原料，在105℃温度和3%赤磷催化剂存在下，通入液氯进行氯化，生成2-氯代丙酸，然后进入氨水溶液中，以乌洛托品为催化剂，在60℃温度下进行氨化，即生成2-氨基丙酸。最后将反应物送入甲醇溶液中进行结晶，经离心、干燥制得α-丙氨酸成品。2.α-溴丙酸氯化法将α-溴丙酸、氨水、碳酸氢铵混合搅拌回流7h，然后蒸发至干，再用乙醇浸泡洗去溴化铵，过滤出结晶，再经脱色过滤，加入乙醇得结晶，过滤干燥得成品。3.氰醇法乙醛与氢氰酸反应生成氰醇，再与氨反应得到氨基腈；然后在碱性条件下水解生成氨基丙酸钠，经离子交换而得α-丙氨酸。
用途: 本品为制造维生素B6、合成泛酸钙和其他有机化合物原料。添加于食品中能增强化学调味料的调味效果，改善甜味剂的味感和有机酸的酸味，提高含醇饮料的质量，防止油类氧化和改善浸渍食品风味等。还可用作生化试剂，用于生物化学和微生物研究方面。
