在检测酒精滥用时，亚油酸乙酯可用作定量脂肪酸乙酯(FAEE)的参考物质。可以使用亚油酸乙酯作为乙酰胆碱酯酶(AChE)抑制剂进行研究。
从三角紫叶酢浆草中分离的亚油酸乙酯能够在小鼠B16黑素瘤细胞中抑制毛喉素诱导的黑色素生成和酪氨酸酶活性。这种抗黑色素生成作用是通过抑制cAMP产生来介导的。
