性质描述:

白色至黄白色结晶或结晶性粉。熔点275-282℃（293℃），无臭或略有臭味，味略甜。L-型的苦味，D-型的甜度与蔗糖相似。0.2%水溶液的pH为5.5-7.0。耐酸、耐光性差。溶于水（25℃时溶解度0.4%）、稀酸和碱，微溶于乙醇。

生产方法:

吲哚经缩合生成夹拉明（3-二甲氨甲基吲哚），进一步缩合生成α-羧酸乙酯-β（3-吲哚）-N-乙酰基-α-丙氨酸乙酯，经水解、脱羧、再水解生成DL-色氨酸。

用途:

营养增补剂、抗氧化剂，可添加明胶、玉米等色氨酸含量少的食品中。与赖氨酸、蛋氨酸、苏氨酸合用于牛肉、米、玉米等，可得最佳效果。DL-色氨酸经旋光折分制得L-色氨酸，是氨基酸输液及综合氨基酸制剂和重要成份，可治疗烟酸缺乏症。作为饲料添加剂，参与动物体内血浆蛋白质的更新，促进核黄素发挥作用，有助于烟酸及血红素的合成，可显著增加怀孕动物胎仔体内抗体，对泌乳期的乳牛和母猪有促进沁乳的作用。当畜禽缺乏色氨酸时，生长停滞，体重下降，脂肪积累降低，种公畜睾丸萎缩。
