脱甲氧基姜黄素 (DMC) 是一种衍生物或姜黄素，是从 姜黄中分离得到的姜黄素产品的主要活性成分之一。DMC通过阻止NF-kB激活来抑制LPS诱导的一氧化氮(NO)产生以及RAW264.7细胞中iNOS和COX2的表达。在LPS处理的大鼠小胶质细胞中，DMC也抑制NF-kB对iNOS，TNFα和IL-1β的表达。DMC通过抑制NF-kB抑制MDA-MB-231人乳腺癌细胞中MMP和ICAM-1的表达。
