性质描述: 无色至淡黄色液体。熔点约-5℃，沸点208-209℃，81℃（0.93kPa），相对密度0.830(20/4℃)，折光率1.4287。闪点85℃。不溶于水及甘油，溶于脂肪油、挥发油、矿物油及80%醇。具有新鲜的油脂香，稀薄时则有果味香，在空气中易氧化而生成癸酸。
生产方法: 存在于天然玫瑰油、柠檬草油、胡荽子油、柑桔油、鸢尾根油、橙花油等中，可通过生成亚硫酸氢盐化合物，然后同其他醛一起从精油里分离出来。工业上生产癸醛，是将癸醛与蚁酸的钡盐混合物在减压下蒸馏制得；或将十一烯酸先制成羟基十一烯酸后干馏制得。也可以用C7-C12组成的正构混合脂肪醇在210℃下用硼酸处理，并同时蒸出生成的水和杂质：将得到的癸醇硼酸酯用热水分解，析出的癸醇用真空蒸馏提纯：然后，在铜铬催化剂下，在200-220℃和减压操作下将癸醇脱氢得到癸醛：工业品癸醛为淡黄色透明液体，含醛量不低于70%（沪Q/QBH 88-79）。
用途: 用于有机合成和作香料用。常用作鸢尾、橙花、素馨、香叶、香堇、玫瑰等香精的调配原料，在制造人工香柠檬油、橙花油、玫瑰油时也少量使用。
